2020 Wrap-Up: How It Started and How It Ended

Since May, I have been working my booty off to drop weight that I amassed from having a baby and coping with the pandemic (which involved a lot of beer and Cheetos / Doritos late at night).

I didn’t take any before / after photos. I wish I did BUT I did document my workouts.

I dropped 20lbs in 7 months with the help of..

  • my mom: She’d watch the kiddo while the Husband and I worked out.
  • the Husband: It’s easier with a buddy and he is my workout + keto buddy. He was the one who got me onto keto. I was so skeptical at first…
  • keto diet: I’ve been on a low carb diet in spurts here and there – especially when I was pregnant (I was diagnosed with gestational diabetes which sucked) but I did it without any rhyme or reason.
  • Carb Manager app: In stepped this awesome app. I tracked my macros and calories – 70% fat, 20% protein and 10% carbs with the goal of losing a pound a week…
  • Ozeri digital food scale: We weigh what we eat and have developed a close relationship with grams. It’s the only way to know how much we’re eating and to start being more aware of what an actual serving size is.
  • Les Mills BodyCombat: I miss training at my muay thai gym so when I found a program that combined my love of muay thai plus really amazing music tracks, I was hooked. The Husband discovered the program on Youtube. At the time, I was making use of the fitness programs on Amazon Prime and Youtube, but I kept going back to BodyCombat. In the end, we decided to sign up for on demand and haven’t looked back. There’s so much more they offer – weights, yoga, barre, dance, HIIT, cardio and more. Plus, the trainers are so inspiring. I didn’t think I could ever workout virtually, but here we are.

More than anything, it was the diet that did the trick. Eating more protein and fat keeps me full and I avoid getting crazy hangry. You can check out all the things I’ve eaten on my food IG account @JPgirlXfood.

It took me a couple months to acclimate. It was some trial and error in finding what foods work for my body (i.e., broccoli/cauliflower/asparagus F* up my system so I avoid them) as well as finding alternatives to my fave carbs like bread and chocolate chip cookies to help me stay the course.

During family dinner, I just eat the song (餸), aka the dishes that accompany the rice, and just not the rice. In place of rice, I eat a shit ton of steamed leafy greens like baby bok choy, gai lan and etc.

Anyhow, I’m really proud of this accomplishment because it was not easy. Being able to fit into my pre-baby clothes once again is a blessing…to my wallet (cuz I did not enjoy having to buy bigger pants). 🙌


The Procrasti-Baking Sessions: Keto/Low Carb Banana Walnut Mini Bundt Cake Testing

I should be working on artwork. I should. Really.

Instead, I tested out a keto / low carb recipe for my new Dash mini bundt cake maker that I picked up on sale at Target during Black Friday (along with a Dash mini pie maker and a Dash mini donut maker…look, I’m my own bakery these days since I’m in quarantine and I’m on keto).

I scoured the internets looking for mug cake recipes that I could adapt and found this Keto Pecan Pie Mug Cake.

I’ll post the recipe once I’ve got it down, but I switched it up and used sugar-free banana syrup and walnuts instead. It came out really good – I’ll just have to scale down the amount of sugar, add some cinnamon + nutmeg and cook it for a minute longer next time.

Took it out a minute too soon so had to nuke it for 20 seconds.

But yeah, I like cake but I don’t want to bake a cake and have to eat it for the next week. I just want a serving for one….ONE…which is why I got the mini bundt maker. And yet, all these recipes for it have been for 6+ cakes.



Slim Jim Squealin’ Hot Pork Rinds Review [VIDEO]

The Mister and I have been doing keto since May. We both have baby weight we need to drop and so far, so good. But, we also still enjoy snacking.

I kept seeing these Slim Jim Squealin’ Hot Pork Rinds pop up in my Amazon feed. Finally, we decided to order a bag in one of our Wholefoods delivery orders and try it out. What’s the verdict?

Ummm…we we ended up going straight to the Slim Jim source and ordering a giant box.

They are my ultimate fave snack. They could be spicier but the seasoning and the texture of the pork rinds – light and crisp – are on point. I reach for these instead of the boujee, expensive Schoolyard Snacks Flaming Hot Cheese Puffs we ordered a few weeks ago…those are not delicious. I need to figure out how to repurpose those suckers…maybe as breading for fried chicken?

I’m quickly learning what my pandemic coping mechanisms are: primarily, ordering bulk keto snack items. I mean, since May I’ve lost almost 16lbs of baby weight so it’s money well spent, no?

How are you coping with the pandemic as we go into November? Also, has anyone tried these? If so, what do you think?


Keto Hot Cheetos? Schoolyard Snacks Flaming Hot Cheese Puff Review [VIDEO]

So, the Mister and I have been doing keto since May. I’ve been on a low carb diet off and on for the past few years – moreso, when I developed gestational diabetes during pregnancy and had to cut out most carbs cold turkey, which was not fun.

But for the past few years, the pounds have packed on. The lack of sleep, stress, not exercising much and not giving a flying F* took its toll. It got to the point where we just had to do something.

The Mister hopped onto keto first and then I followed. The pounds started dropping and we’re pretty happy with the diet. I mean, bacon + eggs for breakfast every morning? Hell, yeah! Macademia nuts get the green light? We’re there. And now, finding keto-friendly version of the snacks we love? Life is good…or is it?

I kept hearing about a these keto hot cheetos snacks from a company called Schoolyard Snacks and had to give it a try.

What’s the verdict? Watch on for our two cents.
